By popular demand, ok just one person asked but I’m sharing it with you all anyway, here is the recipe for the Turkey Quinoa Curry I recently posted a picture of on Twitter. It’s a really simple dish, requires only one pot to make it, is yummy, easily adapted, and it’s low GI.
1 tbsp Canola Oil
500g diced Turkey breasts
1 small red onion, chopped
2 garlic cloves, crushed
400g tin chopped tomatoes
1 tbsp medium Curry powder
1/2 tbsp hot Chilli powder
1/2 tbsp Turmeric
500ml water
170g Quinoa, uncooked
140g tin Petite Pois
Add the oil, turkey and garlic to a large saucepan and cook for 10 minutes, or until the turkey is browned. Add the chopped tomatoes, curry powder, chilli powder and turmeric. Stir well and let it simmer for 5 minutes. Pour in the water, stir and bring to the boil. Add the quinoa, stir in and bring to a rolling boil for a couple of minutes, then reduce the heat slightly. Cover and simmer for 15 minutes. Drain the petite pois, then stir in and continue to simmer for a further 5 minutes. At the end of the cooking time you may find some of the liquid has risen to the top of the pan; just give it a good stir to mix it back in. Serve and enjoy! This recipe serves 4.
I’d love to say that I created this recipe but I can’t. It’s one I found via Pinterest whilst on my quest for low GI recipes, and I just adapted it to the ingredients I had at home, but I have to say it worked well with those adaptations. Sounds a great recipe and wheat free which is great too! We are trying to stay away from wheat which can be quite tricky.

It’s quite tasty, and even better the next day! Avoiding wheat is a tricky one, especially if you like bread as much as I do!
